Wastewater Quality Characteristics
Wastewater from fruit juice beverage production is generated during fruit washing, crushing, pressing, concentration, filling, equipment cleaning and floor washing.
It is divided into high-concentration raw wastewater (pomace, residual concentrated liquid) and low-concentration cleaning wastewater.
Overall, it features high organic content, high sugar concentration, excellent biodegradability, acidic pH and high suspended solids.
(1) The main substrates are glucose, fructose, sucrose and organic acids. The BOD₅/COD ratio ranges from 0.45 to 0.7, indicating excellent biodegradability without refractory toxic organic compounds.
(2) Suspended solids fluctuate drastically, mainly consisting of fruit pulp residues, peels, pectin, fibers and fruit wax.
(3) Production is highly concentrated in fruit harvesting seasons (apple, citrus, peach, grape, etc.), with extremely little wastewater generated in off-seasons.
(4) Wastewater varies by fruit type: citrus wastewater contains essential oil and peel grease; apple wastewater is rich in pectin; grape wastewater has a high tannin content.

(1) High-concentration waste liquid is collected separately; fruit pomace can be recovered via screw pressing, and pectin can be recycled through flocculation;
(2) Low energy consumption during operation, energy saving via biogas recovery, low sludge yield and low chemical reagent cost;
(3) Strict pH control, early warning system for anaerobic volatile fatty acid (VFA), seasonal water storage buffer, and decolorization treatment to guarantee qualified effluent discharge.
